Lemon Bars

These tart and sweet squares are perfect for summer picnics or camping trips!

Crust:
1/2 cup butter
1 cup flour
1/2 cup icing sugar
Blend ingredients and press into a greased 8'' square pan. Bake for 15 minutes at 325 degrees.
Filling:
2 eggs
1 cup sugar
3 tbsp lemon juice
3 tbsp flour
Blend above ingredients at high speed. Pour mixture over baked crust. Return to oven for 25 minutes until filling is set. Cool in pan, dust with icing sugar and slice into bars.
