Valentine Cupcakes
Throw away the cake mixes. Made from scratch cupcakes are just as easy and they taste better.
Ingredients 1 cup sugar 3/4 cup butter 2 1/3 cups flour 3/4 cup milk 2 1/2 tsp baking powder 1 tsp pure vanilla extract 3 large eggsPreheat oven to 350 degrees. Beat together sugar and butter until light and fluffy. Add all other ingredients, mixing well and constantly scraping the sides of the bowl. Increase mixer speed and beat the batter for two minutes to add air. Spoon the batter into large cupcake cases, no more than half full. Bake 17 to 20 minutes.
For icing, combine 1/4 cup margarine, 2 cups icing sugar, and three drops of red food colouring. Add enough milk (2 or 3 tablespoons) to form a soft consistency. Ice the cupcakes and decorate them with red sprinkles. Kids love these. Makes about 20 cupcakes.
