Toffee Bars
These squares are my favorite treat. A
delicious combination of crispy shortbread cookie, creamy toffee
and semi-sweet chocolate.

Cookie Base
1/2 cup butter
1/4 cup sugar
1 1/2 cups flour
Toffee
1/2 cup butter
1/4 cup sugar
2/3 cup condensed milk
2 1/2 tbsp golden syrup (made from cane
sugar, not from corn syrup)
Topping
4 squares semi-sweet baking chocolate
1 tbsp butter
For the cookie base, cream butter and sugar
together until fluffy. Add flour and knead until smooth. Press
dough into greased 8 inch square cake pan. Bake for 20 minutes
at 350 degrees F.
For the toffee, wait until cookie base
comes out of oven and cools. Then put toffee ingredients into
a small saucepan and bring slowly to a boil. Cook for 3 or 4 minutes,
stirring continuously. Pour hot toffee over cookie base.
Once the toffee is cool, melt the chocolate
with the butter and spread over the toffee. When set, cut into
squares. This recipe freezes very well.
