Cherry Cookies
Chocolate coated cherries with a twist.
These moist and delicious cookies make a wonderful picnic treat.
Ingredients:
1 jar maraschino cherries
2 1/2 cups flour
1/2 cup cocoa powder
3/4 tsp baking powder
1 cup butter
1 cup sugar
1 egg
2 tsp pure vanilla extract
2 squares baking chocolate
Stir together flour, cocoa and baking powder.
In a large mixing bowl, beat butter with sugar until softened.
Add egg and vanilla. Beat ingredients well. Add flour mixture
and stir until completely blended.
Shape dough into one inch balls. Place
on an ungreased cookie sheet. Make an indentation in each ball
with your thumb and place a drained maraschino cherry in each
indentation.
Bake cookies at 350 degrees for 10 minutes.
When cookies have cooled, melt the chocolate with 1/2 tsp. butter
and a spoonful of cherry juice. Drizzle a spoonful of the chocolate
mixture over each cookie. Makes approximately 2 dozen cookies.
