Caramel Corn

A lovely autumn treat that's great for Halloween parties.

Ingredients:

1/2 cup pop corn kernels
1 cup butter
2 cups brown sugar
1/2 cup corn syrup
1/2 tsp. baking soda

Method:

Air pop the popcorn into a very large bowl. Pick out any unpopped kernels to avoid dental injury! Grease two 9 by 13 inch oblong baking pans.

Combine butter, sugar and corn syrup in a saucepan over low heat, stirring occasionally. When the mixture comes to a boil leave it for 3 or 4 minutes without stirring. Then quickly add the baking soda and mix until the caramel becomes foamy. Pour the hot foaming caramel over the popcorn and stir until well coated.

Put the caramel corn into the two greased pans and bake at 225 degrees for one hour. Remove the popcorn from the oven every 15 minutes and stir it to separate the kernels. After the caramel corn comes out of the oven stir again or else the kernels will fuse together as they cool. Makes two large bowlfuls.
